Tataki (Japanese: "to hammer" or "to break into pieces"). This refers to a special preparation method for meat and fish. After being flash-seared over an open flame or in a hot pan, the meat or fish is marinated in fine vinegar, cut into razor-thin slices and spiced with ginger. The latter is crushed into a paste before use, hence the name Tataki.
